Course Description

This course is designed to give students a practical, ethical, and forward-thinking foundation in AI to support data analysis, product development, and evidence-based decision-making. This course is open to students across the Sciences and Arts, with emphasis on the application of AI technologies in food, nutrition, and health-related disciplines. It will be delivered in an asynchronous, self-paced format, complemented by optional opportunities for instructor and peer engagement.

 

What You'll Learn

Upon successful completion of this course, you will be able to:

  1. Explain foundational principles and ethical considerations of artificial intelligence, with emphasis on applications in food, nutrition, and related scientific disciplines;
  2. Apply AI-based tools, including Microsoft Copilot, to enhance productivity, interpret data, and generate content in academic and professional settings relevant to food science, nutrition, and related disciplines;
  3. Analyze complex information and synthesize structured outputs using AI to support decision-making and problem-solving;
  4. Create effective, audience-specific communications and professional materials by leveraging AI to tailor tone, format, and content appropriately;
  5. Evaluate and iteratively refine AI prompts to improve output quality, while reflecting on the broader implications of AI use in scientific and societal contexts, and
  6. Critically reflect on the future of AI in shaping the future of research, communication, and practice in food, nutrition and related sciences.
