FOOD*2320 - Applied AI in Food, Nutrition, and Related Sciences
Course Description
This course is designed to give students a practical, ethical, and forward-thinking foundation in AI to support data analysis, product development, and evidence-based decision-making. This course is open to students across the Sciences and Arts, with emphasis on the application of AI technologies in food, nutrition, and health-related disciplines. It will be delivered in an asynchronous, self-paced format, complemented by optional opportunities for instructor and peer engagement.
What You'll Learn
Upon successful completion of this course, you will be able to:
- Explain foundational principles and ethical considerations of artificial intelligence, with emphasis on applications in food, nutrition, and related scientific disciplines;
- Apply AI-based tools, including Microsoft Copilot, to enhance productivity, interpret data, and generate content in academic and professional settings relevant to food science, nutrition, and related disciplines;
- Analyze complex information and synthesize structured outputs using AI to support decision-making and problem-solving;
- Create effective, audience-specific communications and professional materials by leveraging AI to tailor tone, format, and content appropriately;
- Evaluate and iteratively refine AI prompts to improve output quality, while reflecting on the broader implications of AI use in scientific and societal contexts, and
- Critically reflect on the future of AI in shaping the future of research, communication, and practice in food, nutrition and related sciences.
